I have a unique view on transitioning people to Linux from <other>.

Don't provide a desktop that looks similar. Provide a clean, well
functioning desktop that is Linux. Don't try and make them thing they are
using "old tried and true but seriously broken". Make sure they are fully
aware they using the new hotness.

Accounting software transition will be ugly. None use a format that can be
imported into another. Best bet is to use a windows server with terminal
server licensing and use Remmina remote desktop for access.

Every time you stop a school, you will have to build a jail. What you gain
at one end you lose at the other. It's like feeding a dog on his own tail.
It won't fatten the dog.
