We use Citrix XenServer with NFS and haven't gotten any kernel panics. We don't do a lot of snapshots, though. We're mostly using CentOS 6.

Well we are doing snapshots, we think that might be related to the 
kernel panic on NFS. The other issue might be related to EXT4 and 
Xen.
