There is a process of re-downloading that I am unfamiliar with for those with large iTunes libraries.  I could probably hunt down the process for you.

Most of my music in iTunes is unprotected, self-ripped mp3 files where I manage the filesystem structure and layout, and just add the items to iTunes as I dictate.  The few things I have purchased are in unprotected AAC.  When you right-click the file, you have an option to "create mp3 version" for whatever purposes you may have in mind.  (I just tried this on recently purchased content, and it worked)  Extremely large libraries... I think a smart folder of everything purchased, right-click and make mp3 version.

Only drawback I see right now is that it creates the mp3 version on the filesystem in the same location as the source ACC.  It does *NOT*, however, create an iTunes entry so as to prevent having duplicates in your library.  If you'd like to have it there anyhow, though, you simply drag it to your "music" library, and it will be immediately available.
