Marc,

You had me second guessing myself, but I just too a quick look at ubuntu.com.
Their server specifications list neither Gnome, KDE, or another similar
graphical environment.  I believe I tried the server distro before going
with the full-bore desktop version for my server and decided that I still
needed the GUI.  A year or two later I could probably do without it, but
it's nice to have.
