gtkpod just mounts the iPod as a storage device, reading the database
(which is just XML, IIRC).  I am not sure how it would act if you unplug
one iPod and plug the other in while the program is running, but if you
restart gtkpod (assuming that it automatically mounts/reads), it should
be fine.

I think there is an option under File to re-read the DB from the iPod.
This may be what you need to do when switching them out (after mounting)
to avoid a program restart.  I would check, but I do not have gtkpod
installed on my work computer.
