You can have your Cisco devices log to a central syslog server:

logging facility local5
logging source-interface Loopback0
logging 127.0.0.1


Make sure to put your syslog server's IP in for 127.0.0.1.  You can
also change the facility to local1 through local7 for control over what
gets logged where on your logging server.
