I set a up a computer in my car a while back, it was pretty cool.  While 
I wasn't yet a member of the gentoo club then (was even trying to use 
windows embedded - yikes!), I would also too consider doing a gentoo 
setup now-a-days.  Things like festival, gpsdrive, and of course mplayer 
with a nice touch-screen enabled skin, and suspend2 (hibernation) would 
make a really fabulous project.  Couple that with a mythtv setup and 
some automatic jobs for transcoding recordings down to something 
manageable (size/quality-wise) and a way to transfer them to your car 
easily, and you're good to go.
