Pretty simple really.  I do something similar.  I have one box that I 
use for only cd burning.  I mount a share from my primary machine which 
is mounted to all other machines.  Anything I want backed up is dropped 
into /share/archive.

There's a cron job that runs on the cdburner machine that does the tar 
and then burns the cd.

As for adding the date to the end of the file name, see 'man date' it's 
pretty straight forward.
