I would suggest you learn Sendmail. Even if you learn another that you
use for your servers. Sendmail comes default on many distributions, and
sometimes you will not have the choice to change to
qmail/postfix/whatever else. In those situations you will want to know
Sendmail so that you can get the job done, even though you will be
thinking "if only these people would switch to postfix this would be so
much easier."

It is the same reason why I leaned emacs and vi (enough to get around,
not expert), so I can edit text files easily even when Nedit (my editor
of choice) is not available on the system I am using and I cannot
install it.

So I would say learn Sendmail so that you can get around on others
systems, and then learn whichever one appeals to you for your own
systems.
