Their sendmail server should be creating log entries (/var/log/maillog)
showing where each piece of mail is delivered.

Your sendmail server should be creating log entries showing each piece of
received e-mail.

Intra-office mail would only be delivered to your server if (1) your
sendmail server is the primary MX record for their domain and (2) they have
*misconfigured* their sendmail server to deliver *everything* to your
server...

Of course, if they have POP accounts on your server....
